    Absolutely spectacular as always! We often purchase the “thick cut” dry aged grassfed scotch fillet with generous marbling. Allow it to reach room temperature, sear it for for 4-6 minutes each side and voila! perfect crunchy on the outside, juicy on the inside. You’d think you were at Rockpool ;P
