Lamb kleftiko is one of those dishes that rewards patience with genuinely spectacular results. Slow-roasted for hours, wrapped tightly to trap in moisture and flavour, this traditional Greek dish delivers lamb so tender it practically falls off the bone with barely any effort.
Here’s how to make it properly at home, using a whole lamb shoulder as the centrepiece.
What Is Kleftiko?
Kleftiko translates roughly to “stolen” or “hidden,” referring to the dish’s origins as a method used to slow-cook meat in sealed, hidden ovens or pits, allowing it to cook undisturbed for hours while trapping in flavour. Modern versions recreate this effect by wrapping the lamb tightly in foil or parchment before a long, slow roast.
Ingredients for Lamb Kleftiko (Serves 6)
- 1.5–2kg lamb shoulder, bone-in
- 4 garlic cloves, sliced into slivers
- 2 lemons, juiced, plus zest
- 2 tbsp olive oil
- 1 tbsp dried oregano
- 1 tsp ground cinnamon
- Salt and pepper, to taste
- 4 potatoes, cut into large chunks
- 1 cup chicken or lamb stock
- Fresh rosemary or thyme sprigs
- Feta cheese, crumbled, to serve
- Fresh oregano, to garnish
Step-by-Step Lamb Kleftiko Method
Step 1: Prepare the Lamb
Using a small knife, make small incisions across the lamb shoulder and insert the garlic slivers into each cut, which infuses flavour throughout the meat as it cooks.
Step 2: Marinate the Lamb
Combine the lemon juice, zest, olive oil, oregano, cinnamon, salt, and pepper, then rub generously over the entire lamb shoulder. For best results, marinate for at least an hour, or overnight in the fridge.
Step 3: Prepare the Wrapping
Line a large roasting tray with a double layer of foil or parchment paper, large enough to fully wrap around the lamb and potatoes.
Step 4: Assemble the Parcel
Place the potato chunks in the centre of the lined tray, top with the marinated lamb shoulder, then pour the stock around the base. Scatter fresh herb sprigs over the top.
Step 5: Seal Tightly
Wrap the foil or parchment tightly around the lamb and potatoes, sealing all edges firmly to trap steam and moisture during cooking.
Step 6: Slow Roast
Roast in an oven preheated to 150°C for 3.5–4 hours, until the lamb is completely tender and pulls apart easily with a fork.
Step 7: Open and Finish
Carefully open the parcel, being mindful of escaping steam, and return the lamb to the oven uncovered for a final 15–20 minutes at 200°C to lightly brown the top.
Step 8: Rest and Serve
Rest for 10–15 minutes before serving, then finish with crumbled feta and fresh oregano.
Tips for the Best Kleftiko
- Seal the parcel tightly, since trapping steam is essential to achieving the signature fall-apart texture.
- Don’t rush the low-temperature stage, as this is what breaks down the shoulder’s connective tissue properly.
- Check for doneness by feel, the meat should pull apart easily with minimal resistance from a fork.
- Save any remaining juices, spooning them back over the lamb and potatoes before serving for extra flavour.
What to Serve with Lamb Kleftiko
- A simple Greek salad, with tomato, cucumber, olives, and feta
- Warm pita or crusty bread, for soaking up the juices
- A light, herby yoghurt sauce (tzatziki) on the side
